Range and Reef offers every client a completely customized, live-fire grilling and cooking experience. Whether you are hosting a catered Corporate Event, a Wedding Rehearsal or Reception, a Private Party, or other type of Special Occasion, Chef Holderbaum, Owner and Master live-fire grill chef, and his professional staff will create a unique and memorable affair for you and your guests.
Range an Reef can accommodate events with as few as 10 guest to over 200 guests, and spreads can be served buffet-style, family-style, at food and grill stations, or over grill bars. Here are some of the signature “food events” Chef Holderbaum offers, and some of the possible combinations of fine meats, seafood, and fresh vegetables for your event:
SHRIMP AND SEAFOOD BOIL - Wild-caught Gulf shrimp, mid-neck clams, Canadian (PEI) Mussels, smoked Kielbasa, and fresh corn-on-the-cob combined with celery, petite yellow and red potatoes, and brussels sprouts; served buffet-style with cocktail sauce, butter, and two regional coleslaws.
SURF AND TURF GRILL BAR - Beef tenderloin skewers, marinated shrimp, prosciutto-wrapped scallops, and fresh vegetables grilled over natural oak and peach wood fires; served buffet-style with artisanal rolls and breads, and salad.
WEST COAST SURF AND TURF - Whole beef tenderloins oak-grilled paired with 6/9 count Alaskan King Crab legs; served with grilled vegetables, an Arugula salad, and artisanal rolls and breads.
WOOD-FIRED MIXED GRILL - Beef tenderloin skewers, Ukrainian Pork Shashlyk, lemon thyme seasoned chicken breasts, and fresh vegetables grilled over oak, apple, and peach wood; served with artisanal rolls and breads, and salad.
BULL AND OYSTER ROAST - Our signature rotisserie-grilled top sirloin and premium oysters, served raw, grilled, and/or steamed; served with artisanal rolls and breads, and salad.
EAST COAST SURF AND TURF - Whole beef tenderloins or prime rib, oak-grilled with 1.5 pound Maine Lobsters; served with fresh grilled vegetables, an Arugula salad, and artisanal rolls and breads.
NEW ENGLAND LOBSTER CLAMBAKE - A traditional “New England Bake” with 1.5 pound wild-caught Maine lobsters steamed over seaweed. The Bake includes steamer clams, PEI mussels, corn-on-the-cob, potatoes, onions, and smoked Keilbasa; served buffet-style with butter and two regional coleslaws.
ROTISSERIE-GRILLED TOP SIRLOIN - Black Angus center-cut top sirloin roasts rotisserie-grilled over a natural oak wood fire for up to four hours and thinly-sliced; served with grilled Portobella mushrooms, asparagus tips and broccolini, an Arugula salad, artisanal rolls and breads, and a horseradish cream sauce.
SEAFOOD GRILL - Marinated shrimp, prosciutto-wrapped scallops, and swordfish skewers grilled over a natural peach wood fire; served with grilled asparagus and cauliflower florets and regional coleslaws.

After crafting the appropriate menu, he and his staff travel to the intended location and cook right before your eyes, enchanting onlookers with a fiery spectacle of culinary craftsmanship.
All food is prepared onsite using the highest quality, fresh, and seasonal ingredients sourced from local providers.
We use only natural wood fires of oak, maple, cherry, peach, and apple wood in our professional Grillworks grills. The wood fire infuses the meat, seafood, and veggies with a distinct, smoky flavor that guests are able to enjoy hot-off-the-grill.
We can accommodate anywhere from 10 to over 200 people, and service the Washington DC, Annapolis and Baltimore areas, as well as Northern Virginia and the Eastern Shore.
