Because Range and Reef prepares and cooks all food on-site, Chef Jim has flexibility in the types of meats, poultry, seafood, and vegetables he uses, and can cook, grill, and serve them in a variety of ways. Also, he only uses “live fires” of natural oak, cherry, peach, and apple wood (never charcoal or propane gas). His grilling styles include rotisserie, skewers & kabobs, and surface grilling.

Signature Buffets, Attended Stations, and Raw and Grill Bars
Rotisserie Grilled Top Sirloin
Whole center-cut top sirloin roasts are slow-grilled over natural oak wood fires for up to 4 hours and thinly sliced. Served buffet style with grilled vegetables, Artisanal rolls and breads, horseradish cream sauce and an arugula salad.
Shrimp and Seafood Boil
Includes wild caught gulf shrimp, mid-neck clams, Canadian (PEI) mussels, smoked Kielbasa (can also include Andouille sausage), and fresh corn, celery, fingerling potatoes, and Brussels sprouts. Served buffet/family style with cocktail sauce and butter and two regional cole slaws.
Wood Fired Mixed Grill
Beef Tenderloin skewers, Ukrainian pork shashlyk, lemon-thyme chicken breasts, and fresh vegetables grilled over oak, apple and peach wood. Served buffet style with Artisanal rolls and breads and an Arugula salad.
Grilled and Raw Oyster Bar
Premium farm-raised and wild caught oysters served peach wood-grilled and/or raw over a cedar bar station with butter, lemon, mignonettes, and cocktail sauce.
New England Lobster/Clambake
A traditional New England “bake” with 11⁄2 lb. wild caught Maine lobsters steamed over seaweed. The bake includes: steamer clams; PEI mussels; corn; potatoes and onions and is served buffet style with butter and two regional cole slaws.
Features split Alaskan King Crab, marinated shrimp, and prosciutto-wrapped scallops grilled over a natural peach wood fire. Served buffet style with Artisanal rolls, breads and salads.
Surf and Turf Grill Bar
Beef Tenderloin skewers, petite lamb chops, marinated Shrimp, and Prosciutto-wrapped scallops grilled over natural oak and Peach wood fires. Served buffet style with Artisanal rolls, breads and Salads.
